I've been trying to figure out who Jeanne Amyot might have been and my conclusion are as follows:
As she is mentionned to be from Aillevans on her marriage certificate and Claude Thouret her husband from Chazot, I think we can rely on the fact that she was indeed born there and not a "migrant" to the Haute-Saône province like her husband. From her mariage and death certificate, we can also estimate her birth date around 1701/1702.
Going through various records for Aillevans/Moimay, I found out that there is just one Amyot couple who had children around that time in the early 1700s, indeed Amyot Jean Pierre x PREVOST Marguerite.
There are birth records for seven children born from this marriage:
1) Anne Claude (1705)
2) Claude Suzanne (1706) married to SERVANCE Jean Baptiste
3) Marguerite (1711)
4) Jean Françoise (1713)
5) Jean Baptiste (1715) married to DEMOUGEY Anne Françoise
6) Anne (1719)
7) Jeanne Claude (1723) married to BOURQUIN Jean François
Marguerite (3) is stated as standing in for godmother Claire Françoise POUTHIER on Claire Françoise birth certificate.
Claude Thouret is again mentionned as one of the four witnesses on the marriage certificate of Claude Suzanne (2) and as witnesses for marriages are usually family members or in-laws, this may indicate a direct family link of Jeanne Amyot with this sole and unique Amyot family in Aillevans.
